Usually, it is a mildly acid flavour, light bodied but tasteful & aromatic. Peru beans are considered a good blending coffee due to its pleasant but understated character. The Cuzco region, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peruvian coffee beans can be a dark roast but do not need to be. Light or dark roast depends on the coffee bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating location and partly influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees show a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the largest coffee crop:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield plant but produces high qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee cultivation area lies at an elevation range of 1000 to 1,800 metres.
