Generally, a mildly acid coffee, light-bodied but tasteful & aromatic. Peruvian coffee are thought of as a good blending coffee because of its nice but understated characteristics. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peruvian coffee can be a dark roast but does not need to be. lighter or darker roast is dependent on the coffee roaster after the coffee has been produced. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is partly due to the growing area and in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are produced at lower altitudes.
Both coffees show a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee grown:
- 70% of which is Typica (Typica is an original Arabica type that is a tall & leggy low yield tree but produces high qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee cultivation area lies at an elevation range of 1,000–1,800 m.
