Typically, a mildly acid flavour, light bodied but flavourful & aromatic. Peru beans are considered a good blending coffee because of its nice but understated characteristics. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The best grade is AAA.
Peru coffee may be a darker roast but do not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is because of the growing area and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are produced at lower elevations.
Both beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall and leggy small yield shrub but provides excellent qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee farming area lies at an elevation range of 1,000 to 1,800 metres.
