Typically, it is a mildly acid coffee, light-bodied but tasteful & aromatic. Peruvian are known as a good blender because of its pleasant but understated characteristics. The Cuzco region, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian beans can be a dark roast but does not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is because of the farming location and in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are produced at lower elevations.
Both beans exhibit a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but produces high qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75 percent of the coffee growing area is at an altitude range of 1000–1800 m.
