Generally, it is a mildly acid cup, light bodied but tasteful and aromatic. Peruvian coffee are known as a good blending coffee because of its pleasant but understated character. The Cuzco region, especially the Urubamba Valley, also grows renound wet-processed coffee. The best grade is AAA.
Peruvian coffee beans can be a dark roast but do not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been farmed. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is partly due to the growing region and in part impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are farmed at lower elevations.
Both beans exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield shrub but produces excellent qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other varieties.
About 75% of the coffee growing area is at an altitude range of 1,000–1800 metres.
