Usually, a mildly acid cup, light-bodied but flavourful & aromatic. Peruvian coffee are known as a good blending coffee because of its nice but understated characteristics. The Cuzco location, especially the Urubamba Valley, also produces renound wet-processed coffee. The highest grade is AAA.
Peru coffee can be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is in part due to the farming location & partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both coffees show a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee grown:
- 70% of which is Typica (Typica is an original Arabica type that is a tall & leggy low yield shrub but produces great qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee growing area is at an elevation range of 1,000 to 1,800 metres.
