Typically, it is a mildly acid taste, light bodied but flavourful & aromatic. Peru coffee are thought of as a good blender due to its nice but understated attributes. The Cuzco area, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest level is AAA.
Peru beans can be a dark roast but do not need to be. lighter or darker roast depends on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is partly due to the farming region & in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatra, are produced at lower altitudes.
Both coffee beans show a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield tree but produces high qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivating area is at an altitude range of 1,000 to 1800 m.
