Typically, a mildly acid flavour, light bodied but tasteful and aromatic. Peruvian coffee are known as a good blending coffee due to its pleasant but understated character. The Cuzco location, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peru coffee beans may be a darker roast but do not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is in part due to the cultivating location & in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower altitudes.
Both coffee beans exhibit a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield tree but produces great qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75% of the coffee cultivation area is at an elevation range of 1,000 to 1,800 m.
