Generally, it is a mildly acid coffee, light bodied but tasteful & aromatic. Peru coffee beans are considered a good blender because of its pleasant but understated attributes. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian coffee can be a darker roast but does not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is partly due to the cultivating location and in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are produced at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee cultured:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield shrub but produces high qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75% of the coffee farming area lies at an altitude range of 1,000 to 1800 metres.
