Typically, it is a mildly acid cup, light bodied but flavourful and aromatic. Peruvian coffee beans are thought of as a good blending coffee owing to its pleasant but understated characteristics. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a dark roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating area & in part influenced from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both coffees have a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall and leggy low yield tree but provides high qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75 percent of the coffee cultivating area lies at an elevation range of 1,000 to 1,800 metres.
