Usually, a mildly acid cup, light-bodied but tasteful & aromatic. Peruvian coffee are thought of as a good blending coffee owing to its nice but understated character. The Cuzco region, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peruvian beans can be a darker roast but do not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been grown. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating region and in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are produced at lower elevations.
Both coffee beans exhibit a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the primary coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield shrub but produces high qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee growing area lies at an elevation range of 1,000–1800 metres.
