Generally, a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian are known as a good blender owing to its nice but understated character. The Cuzco area, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The best grade is AAA.
Peru coffee beans can be a dark roast but does not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is as a result of the growing region & in part impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatra, are produced at lower altitudes.
Both beans show a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee farmed:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield plant but provides excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the rest are other types.
About 75 percent of the coffee growing area lies at an elevation range of 1,000 to 1800 m.
