Usually, a mildly acid taste, light bodied but tasteful & aromatic. Peruvian beans are considered a good blending coffee owing to its nice but understated attributes. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian coffee beans can be a darker roast but do not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is partly due to the growing region and partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffees show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield tree but provides high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee farming area is at an elevation range of 1000–1800 metres.
