Generally, it is a mildly acid coffee, light-bodied but tasteful and aromatic. Peruvian beans are thought of as a good blender because of its nice but understated characteristics. The Cuzco region, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peru beans can be a darker roast but does not need to be. Light or dark roast depends on the coffee roasting after the coffee has been farmed. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the cultivating area and in part impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatra, are farmed at lower altitudes.
Both beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy low yield plant but provides great qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other varieties.
About 75% of the coffee cultivation area is at an altitude range of 1000–1,800 metres.
