Usually, a mildly acid flavour, light bodied but flavourful & aromatic. Peruvian coffee are thought of as a good blending coffee because of its pleasant but understated attributes. The Cuzco region, particularly the Urubamba Valley, also produces renound wet-processed coffee. The highest grade is AAA.
Peru coffee beans can be a darker roast but does not need to be. Light or dark roast depends on the bean roasting after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the cultivating region and partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are grown at lower elevations.
Both beans exhibit a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the primary coffee cultured:
- 70% of which is Typica (Typica is an original Arabica type which is a tall and leggy low yield tree but provides great qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest are other varieties.
About 75% of the coffee growing area lies at an elevation range of 1000 to 1,800 m.
