Usually, a mildly acid cup, light-bodied but flavourful and aromatic. Peruvian coffee beans are considered a good blending coffee owing to its pleasant but understated attributes. The Cuzco location, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peruvian coffee may be a darker roast but does not need to be. lighter or darker roast depends on the bean roasting after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is because of the cultivating area and partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are produced at lower altitudes.
Both coffees exhibit a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the largest coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield shrub but provides high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75% of the coffee growing area is at an altitude range of 1,000–1,800 m.
