Generally, a mildly acid flavour, light-bodied but tasteful & aromatic. Peruvian coffee beans are known as a good blending coffee because of its pleasant but understated character. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peruvian coffee can be a dark roast but do not need to be. Light or dark roast depends on the bean roasting after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is because of the cultivating region & in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatra, are produced at lower altitudes.
Both coffee beans have a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the primary coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield shrub but produces excellent qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75 percent of the coffee cultivating area is at an elevation range of 1000–1800 metres.
