Generally, it is a mildly acid cup, light bodied but flavourful and aromatic. Peru beans are thought of as a good blender due to its nice but understated character. The Cuzco location, particularly the Urubamba Valley, also grows respected wet-processed coffee. The best grade is AAA.
Peru beans can be a dark roast but do not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been grown. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the growing area & partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower elevations.
Both beans show a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield shrub but produces high qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee cultivation area is at an altitude range of 1000–1800 m.
