Generally, it is a mildly acid taste, light bodied but flavourful and aromatic. Peru beans are known as a good blender due to its pleasant but understated characteristics. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peru coffee can be a darker roast but does not need to be. lighter or darker roast is dependent on the coffee bean roaster after the coffee has been farmed. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is as a result of the cultivating region and in part impactged from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are cultivated at lower elevations.
Both beans have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield shrub but produces excellent qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other varieties.
About 75 percent of the coffee growing area is at an altitude range of 1,000–1,800 m.
