Usually, it is a mildly acid cup, light-bodied but tasteful & aromatic. Peruvian beans are known as a good blending coffee because of its nice but understated character. The Cuzco location, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peruvian coffee can be a dark roast but do not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been farmed. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is in part due to the cultivating location & partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are farmed at lower altitudes.
Both coffees exhibit a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the primary coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield tree but produces excellent qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest being of other types.
About 75 percent of the coffee farming area lies at an altitude range of 1000 to 1,800 metres.
