Generally, a mildly acid coffee, light bodied but tasteful & aromatic. Peruvian coffee beans are thought of as a good blending coffee because of its pleasant but understated attributes. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peru coffee can be a dark roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the cultivating location & partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatra, are grown at lower altitudes.
Both beans exhibit a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield tree but provides great qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee cultivating area lies at an elevation range of 1000–1800 metres.
