Generally, it is a mildly acid taste, light-bodied but tasteful & aromatic. Peruvian coffee are considered a good blending coffee because of its nice but understated attributes. The Cuzco area, especially the Urubamba Valley, also produces renound wet-processed coffee. The best level is AAA.
Peruvian beans can be a darker roast but do not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating location and partly influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are produced at lower altitudes.
Both coffees show a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica type which is a tall and leggy low yield tree but provides excellent qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest are other varieties.
About 75% of the coffee growing area lies at an elevation range of 1000–1,800 m.
