Generally, it is a mildly acid cup, light-bodied but tasteful & aromatic. Peru coffee are considered a good blending coffee owing to its pleasant but understated character. The Cuzco location, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peru beans can be a dark roast but do not need to be. lighter or darker roast is dependent on the coffee bean roaster after the coffee has been produced. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is as a result of the farming area & in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatra, are produced at lower elevations.
Both coffees show a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield plant but provides excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75% of the coffee cultivating area is at an altitude range of 1000 to 1800 m.
