Typically, a mildly acid flavour, light bodied but tasteful and aromatic. Peruvian are known as a good blending coffee owing to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian coffee can be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been produced. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is as a result of the farming area and in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower altitudes.
Both coffees have a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall and leggy small yield tree but provides excellent qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75 percent of the coffee cultivation area lies at an altitude range of 1000 to 1,800 metres.
