Generally, it is a mildly acid coffee, light bodied but tasteful & aromatic. Peruvian beans are thought of as a good blender due to its nice but understated attributes. The Cuzco location, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The highest grade is AAA.
Peru beans may be a dark roast but does not need to be. Light or dark roast depends on the coffee roaster after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is as a result of the farming area & partly impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatran, are grown at lower altitudes.
Both coffee beans show a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield shrub but provides excellent qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75% of the coffee cultivation area lies at an altitude range of 1,000–1800 m.
