Generally, a mildly acid cup, light bodied but flavourful and aromatic. Peruvian beans are known as a good blending coffee because of its pleasant but understated characteristics. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peru coffee can be a darker roast but does not need to be. Light or dark roast depends on the coffee bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing location and partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are farmed at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield shrub but provides great qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivating area is at an altitude range of 1000 to 1,800 m.
