Typically, a mildly acid coffee, light bodied but flavourful & aromatic. Peruvian are known as a good blender due to its pleasant but understated characteristics. The Cuzco area, especially the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian coffee may be a darker roast but do not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is in part due to the cultivating region & partly influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffees have a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee farmed:
- 70% of which is Typica (Typica is an original Arabica type that is a tall & leggy small yield plant but produces high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75 percent of the coffee farming area is at an altitude range of 1000 to 1,800 m.
