Usually, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian coffee beans are considered a good blender because of its nice but understated characteristics. The Cuzco area, especially the Urubamba Valley, also produces renound wet-processed coffee. The best level is AAA.
Peru coffee may be a darker roast but do not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing area and in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are cultivated at lower elevations.
Both beans show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield tree but produces high qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee farming area is at an elevation range of 1,000–1800 metres.
