Usually, it is a mildly acid flavour, light bodied but flavourful & aromatic. Peru beans are known as a good blending coffee owing to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been farmed. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the cultivating area & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffee beans have a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall & leggy small yield tree but provides high qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivating area is at an altitude range of 1000 to 1,800 m.
