Generally, a mildly acid taste, light-bodied but tasteful and aromatic. Peruvian coffee are thought of as a good blender due to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peruvian beans may be a dark roast but do not need to be. lighter or darker roast depends on the bean roaster after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is because of the farming region & in part influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatra, are farmed at lower altitudes.
Both coffee beans show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the primary coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield plant but provides great qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest are other types.
About 75 percent of the coffee cultivation area lies at an altitude range of 1000 to 1800 m.
