Typically, it is a mildly acid coffee, light bodied but flavourful & aromatic. Peruvian coffee beans are known as a good blender owing to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also produces renound wet-processed coffee. The best level is AAA.
Peruvian coffee beans can be a darker roast but do not need to be. Light or dark roast is dependent on the bean roasting after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing location & partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are cultivated at lower elevations.
Both beans have a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield shrub but produces excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75% of the coffee farming area lies at an elevation range of 1,000–1800 m.
