Generally, it is a mildly acid flavour, light bodied but tasteful and aromatic. Peru beans are known as a good blender because of its pleasant but understated character. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but do not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is as a result of the growing area and partly influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatra, are farmed at lower elevations.
Both coffees have a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield plant but provides excellent qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee cultivation area lies at an altitude range of 1,000 to 1,800 m.
