Typically, a mildly acid coffee, light bodied but flavourful and aromatic. Peru coffee beans are known as a good blender owing to its pleasant but understated attributes. The Cuzco region, especially the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peruvian coffee may be a darker roast but do not need to be. lighter or darker roast is dependent on the coffee bean roaster after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is as a result of the cultivating area and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are produced at lower altitudes.
Both beans exhibit a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield tree but provides great qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75 percent of the coffee cultivating area lies at an altitude range of 1000–1,800 m.
