Typically, it is a mildly acid coffee, light bodied but flavourful and aromatic. Peru are thought of as a good blender due to its nice but understated attributes. The Cuzco region, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but do not need to be. lighter or darker roast is dependent on the bean roaster after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is in part due to the farming region & partly impactged from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatran, are farmed at lower elevations.
Both coffees have a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy low yield shrub but produces great qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75 percent of the coffee cultivation area is at an altitude range of 1,000 to 1,800 metres.
