Generally, it is a mildly acid cup, light bodied but tasteful and aromatic. Peru coffee are known as a good blending coffee because of its nice but understated attributes. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peruvian beans can be a darker roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is because of the growing region and in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffee beans have a simple yet balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield shrub but produces excellent qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee farming area lies at an altitude range of 1,000 to 1,800 metres.
