Usually, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian are thought of as a good blending coffee owing to its pleasant but understated character. The Cuzco region, especially the Urubamba Valley, also grows renound wet-processed coffee. The highest grade is AAA.
Peru beans can be a darker roast but do not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is because of the growing region & partly influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are grown at lower altitudes.
Both beans show a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall & leggy small yield shrub but provides great qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75% of the coffee farming area is at an elevation range of 1,000 to 1800 metres.
