Typically, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian coffee are known as a good blender owing to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The highest level is AAA.
Peruvian coffee may be a dark roast but does not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the growing region & partly impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatran, are produced at lower altitudes.
Both coffee beans exhibit a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall & leggy low yield shrub but produces high qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75% of the coffee cultivation area lies at an elevation range of 1000–1800 metres.
