Typically, it is a mildly acid cup, light bodied but flavourful and aromatic. Peru beans are considered a good blender due to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peru beans can be a darker roast but does not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing area and partly impactged from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both beans show a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy small yield tree but produces excellent qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest being of other types.
About 75 percent of the coffee farming area is at an elevation range of 1000 to 1,800 m.
