Typically, it is a mildly acid cup, light bodied but tasteful & aromatic. Peruvian beans are considered a good blending coffee owing to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is because of the cultivating location and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatran, are grown at lower altitudes.
Both coffees show a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield shrub but provides high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee growing area is at an elevation range of 1000 to 1800 metres.
