Generally, a mildly acid coffee, light-bodied but tasteful & aromatic. Peru are known as a good blender because of its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest grade is AAA.
Peru coffee may be a dark roast but does not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been produced. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is partly due to the cultivating area & partly impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatra, are farmed at lower altitudes.
Both beans exhibit a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee crop:
- 70% of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield plant but provides high qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder are other types.
About 75% of the coffee cultivation area is at an altitude range of 1000–1,800 metres.
