Generally, it is a mildly acid cup, light-bodied but tasteful and aromatic. Peru coffee are thought of as a good blending coffee because of its pleasant but understated character. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peru beans can be a darker roast but does not need to be. Light or dark roast depends on the coffee bean roaster after the coffee has been produced. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is because of the growing area and in part impactged from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatran, are farmed at lower elevations.
Both coffee beans exhibit a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall & leggy small yield plant but produces great qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75 percent of the coffee growing area is at an altitude range of 1,000–1,800 metres.
