Generally, a mildly acid coffee, light bodied but flavourful and aromatic. Peruvian are thought of as a good blending coffee because of its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also produces renound wet-processed coffee. The highest grade is AAA.
Peru coffee beans may be a darker roast but do not need to be. Light or dark roast depends on the coffee roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is as a result of the growing location & in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the primary coffee farmed:
- 70% of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield plant but produces great qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75 percent of the coffee growing area lies at an elevation range of 1000 to 1800 m.
