Typically, it is a mildly acid taste, light bodied but flavourful & aromatic. Peruvian are considered a good blender due to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peruvian beans can be a darker roast but does not need to be. Light or dark roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is partly due to the growing location and partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower altitudes.
Both beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee crop:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy low yield plant but provides great qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75% of the coffee farming area is at an altitude range of 1000 to 1800 m.
