Generally, a mildly acid taste, light bodied but flavourful and aromatic. Peruvian are known as a good blender due to its nice but understated characteristics. The Cuzco region, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peruvian coffee can be a dark roast but does not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is because of the farming region and partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatra, are grown at lower altitudes.
Both coffees show a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield tree but provides excellent qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75% of the coffee cultivation area is at an elevation range of 1,000–1800 metres.
