Generally, a mildly acid coffee, light-bodied but tasteful and aromatic. Peruvian are thought of as a good blender due to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peruvian beans can be a darker roast but does not need to be. lighter or darker roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is as a result of the cultivating region and in part influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are produced at lower elevations.
Both coffee beans show a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the primary coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy low yield shrub but produces excellent qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest are other varieties.
About 75 percent of the coffee cultivation area is at an elevation range of 1000 to 1800 m.
