Generally, a mildly acid cup, light-bodied but flavourful & aromatic. Peru beans are known as a good blender owing to its nice but understated attributes. The Cuzco region, especially the Urubamba Valley, also produces renound wet-processed coffee. The best level is AAA.
Peru coffee can be a dark roast but does not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing region & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatra, are grown at lower elevations.
Both beans have a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica type that is a tall and leggy low yield shrub but produces high qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest are other types.
About 75% of the coffee cultivation area lies at an elevation range of 1000–1,800 m.
