Generally, a mildly acid coffee, light-bodied but flavourful and aromatic. Peru beans are thought of as a good blender due to its nice but understated attributes. The Cuzco area, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peru coffee can be a darker roast but do not need to be. Light or dark roast depends on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is in part due to the farming area & in part impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are produced at lower elevations.
Both coffees show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the largest coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield tree but provides excellent qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest are other varieties.
About 75 percent of the coffee growing area lies at an elevation range of 1,000 to 1800 metres.
