Typically, a mildly acid flavour, light-bodied but tasteful and aromatic. Peruvian coffee are considered a good blender due to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also grows renound wet-processed coffee. The highest grade is AAA.
Peruvian coffee beans may be a darker roast but do not need to be. Light or dark roast depends on the bean roaster after the coffee has been produced. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is as a result of the farming area and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffees have a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy small yield tree but produces excellent qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75 percent of the coffee farming area lies at an altitude range of 1000–1800 metres.
