Usually, it is a mildly acid taste, light bodied but flavourful & aromatic. Peruvian are considered a good blender due to its nice but understated characteristics. The Cuzco region, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peru beans can be a darker roast but do not need to be. Light or dark roast depends on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is because of the cultivating region & in part influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans exhibit a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee cultured:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall and leggy low yield tree but provides great qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75 percent of the coffee cultivation area is at an altitude range of 1000 to 1,800 m.
