Generally, it is a mildly acid flavour, light bodied but tasteful and aromatic. Peru are known as a good blending coffee owing to its pleasant but understated character. The Cuzco location, especially the Urubamba Valley, also produces renound wet-processed coffee. The best level is AAA.
Peruvian beans can be a darker roast but does not need to be. Light or dark roast depends on the coffee bean roaster after the coffee has been grown. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is partly due to the growing region & partly impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees have a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield plant but provides great qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee cultivating area lies at an altitude range of 1,000 to 1,800 metres.
